If you hold a UK passport and travel to Hong Kong then you gain a 3 month visa on arrival. If you then plan to travel into mainland you will need a single entry visa. As you plan to travel form Hong Kong into the mainland many times you will need a double or multiple entry visa depending on how many times you intened to go back and forth.
